On the west part of Jamaica in the inner crevices of St Elizabeth parish is Nassau valley part of Cockpit country with its unique limestone hills, is the birthplace of an iconic Caribbean rum, Appleton. Begun in 1749, with a perfect climate for growing sugar cane of warm, sunshine mornings and daily afternoon showers, that cane is pressed and mixed with the pristine limestone spring waters for a distillation of the cane molasses with a fermenting yeast,then aged in American oak barrels for final spirits considered some of the finest of the Caribbean islands.
